Brooke’s Moms Famous HEALTHY Banana Bread (not necessarily low in calories – but very nutritious and delicious!
½ cup canola oil
1 cup sugar
2 egg whites
1 cup mashed bananas
3 T plain nonfat yogurt
1 T lemon juice
2 cups whole wheat flour
1 ½ tsp baking powder
½ tsp baking soda
1 cup chopped pecans
At Christmas add chopped red and green cherries
Cream oil and sugar. Beat in egg whites, bananas, yogurt and lemon juice.
Add dry ingredients. Stir just enough to mix well. Fold in nuts. Line loaf pan with foil (easier clean up). Bake at 350 degrees for 50 minutes or until tests done with a toothpick.
Makes one loaf (15 slices per loaf)
~3069 calories/loaf – no pecans or cherries
~200 calories per slice
~4,034 calories/loaf with pecans and cherries
~270 calories per slice
Freezes well but is best to eat it warm with a glass of nonfat milk!
